No, Plex will not help you pirating content.

If that would be pirating content then anyone that uses a DVR or video recorder to record TV shows, to time-shift, is pirating?
I suggest you to consult a qualified legal advisor, like a lawyer.
Or maybe ask pluto.tv if it’s OK to record their content using a different app than their own.
