There appears to be a similar issue to the recently fixed Plex player crash which was fixed as per…
Though the above is fixed on my devices, when playing a single song and setting it to Repeat All or One, once the song finishes it just stops if the screen on the device is off or Plex has been closed and doing something else on the device (i.e. background music playback).
Going back into Plex the song is still there and can be replayed but the same issue occurs above if the screen is off. In PMS the song is sitting there in the now playing dashboard (but not playing).
Steps:
open the Plex player on the device (iPhone or iPad)
select a song
click on the menu item between the queue (on the left) and the 3 dot menu (on the right)
Toggle the Repeat options by tapping on the None entry (which is the default)…set it to One
Start the song playing and then turn off the screen or just close Plex and do something else on the device

I just tested this and it seems to be working as expected (repeating the same song all over).
That being said I’m on the stable / non-beta version of iOS (iOS 15.x) with the latest Test Flight preview of the Plex iOS client app (version 8.8). So this working for me might be related to a bug already having been fixed in Plex 8.8 or the issue being specific to the iOS 16 beta
I tried my wife’s iPhone, which is using iOS 15.6.1 and Plex 8.7.3, and has the same behavior. So it looks like the bug might already be fixed in the next Plex release
