Years ago I believe at one point they did support STRM files but removed like they always remove stuff
This is a feature suggestion that was mentioned a long time ago, but plex arrogantly ignored it.

Itās crazy that after all this time I had to move to Emby, because Plex doesnāt listen to its customers.

Whatās sad is, I had looked into this because PMS has support for STRM in a few places. Thereās only one tiny piece that prevents playback and itās easy to fix. I was going to ask about actually implementing it but then the layoff occurred.
Now that PMS is down to only 2 developers, I expect this will never be enough of a priority.
