Recorded the Buffalo game on my iPad last night. No options available to extend recording length. Turned it on this morning to watch the end of the game. Recording ended with time left in the game and the Bills trailing. Thanks Plex! What a GREAT user experience!
Till such time as they add the advanced recording options selection back you can always open https://app.plex.tv and create/modify the recording there.
Alternatively you can use the Desktop app or Server browser for Live TV - DVR
