Actually you are asking for a lot and the target is a moving one.
As an example consider the Roku:
From about a year or two ago this was listed on their web site:
Video — MKV (H.264), MP4 (H.264), MOV (H.264), WMV (VC-1, firmware 3.1 only)
Music — AAC, MP3, WMA, FLAC (firmware 5.3 and later), WAV (firmware 5.3 and later)
Photo — JPG, PNG, GIF (non-animated)
Currently I do not find a definitive list but they have added several more codecs and the various Roku models have different supported codecs and resolutions.
Compiling a list for even some Plex clients would be a quite daunting task but good luck in your quest.
I find it best to simply use MKV (H.264) and MP4 (H.264) for all my video with the audio encoded as simple Dolby 2.1 or 5.1. That direct plays on all my clients at worst some audio transcoding is needed on some files. (Roku 3 and Ultra, Fire TV, Shield TV and Raspberry PI [PMP]) I do not need to worry beyond that and I just let Plex handle the details.
