Server Settings Unavailable after latest Plex update to MAC Mojave

Hello,
I am a new user to Plex and am running Plex server on a new Mac with the Mojave OS. The NAS is located on a new Qnap. Everything was working very well until two days ago. I was adding a new music library and chose to install the latest update before doing so. Suddenly, everything got very, very slow and the process kept freeing. Scanned the support files and decided the update must be the issue, so I uninstalled Plex (probably incorrectly) and reverted to the prior version. The new library now uploaded without freezing, but that’s about it. I can no longer add other libraries.
There are now two servers listed rather than one and Plex may be getting confused with some sort of residual data from the prior install (a guess), but I cannot access the server settings as the program reports they are “unavailable.” I read the support article about regaining access to the server, but there are no Plex files to be found in /library/preferences or any other location. Everything on the NAS is working great, so the issue seems to be with Plex. Not sure where to start with fixing things. Thanks,
