Server upgrade time for Plex. Could use some help

Several years ago, I moved my Plex system from my PC to a dedicated server and picked up a Lenovo ThinkServer TS140 that’s currently running Ubuntu 16.04 LTS. It’s been great for many years running just one or two 1080p streams at a time, but now I’m getting into multiple streams at up to 4k and the server is just not having it. I’ve also gotten to the point of storage being unruly with 12 internal hdd in 3 separate external closures. It’s a mess, to say the least, and I’m looking for a more elegant solution that’ll hold 12 drives up to 8tb each.

I could build something myself, rack-mounted in a closet, and manage it remotely, but I’m not going to lie. My skills with creating and managing a RAID properly are pretty poor. I could dive in and figure it out, but I also know there’s a lot of solutions out there that will do it all for me. I really don’t want to do any of it without proper guidance, though. What kind of Plex servers are you guys using or recommending with a capacity around 80-100TB and fast enough to push a couple streams of 4k content?
