I want every single one of my shows/episodes/movies in certain folders to have the exact same poster/background/image/etc. I have to do this by hand every time. Is there a way to permanently set an alternative image? Thanks.

Thanks Chuck. This seems to be the solution, but the amount of steps it requires (creating and keeping many separate folders for each show) would be a bigger pain for me. I am wondering if there is a global way to set the background images, or set it to not search for images, just show info.
As I understand the mechanism, because of Plex’s basic design of ‘meta data and posters for each’, the override has to be done for each movie / tv show. This means you simply copy your designed image into the folder/directory for the whole show/movie, above the ‘Season’ directories once. It does not need a tailored name in any other way
Are you possibly wanting a ‘skin’ capability like that in PHT ?
I want it at the server level, not skinned. I keep all of the episodes in one big folder, I don't use the folder structure/naming with show/season/episode/etc. we go through so many different ones and there are so many additions and deletions, and re-additions, that it would be a big pain to have it all structured out just for this reason. I thought there might be a global override.
If everything is in one monolithic location, did you drop ‘poster.jpg’ in with them?
Yes, it's there.
Then short of modifying code, or using something like FileBot to snap things in place plus a batch script to distrib the artwork automatically, I think you are stuck unfortunately
