As the Pi doesn't have an inbuilt clock, I believe it takes the time from the Plex Server, might be worth looking at the time on there?

The RPi in unable to keep the time until it's powered off (as already mentioned).
Thus, the time will be fetched via NTP (https://en.wikipedia.org/wiki/Network_Time_Protocol) after boot.
(Internet connection necessary)
Btw.: It's possible to set the timezone via the preferences...
Time is updated automatically, but you need to set the time zone manually (it drove me nuts too because initially I could not find the option).
It is currently driving me nuts as I cannot seem to find the option either...please do share the secret with me. Where exactly is the timezone preference?
UPDATE: Of course, as soon as I post this....
For those interested in setting the time / clock, locate the timezone preference (as mentioned above) here:
Preferences --> Appearance --> International
