For some reason when adding a new movie, my server tends to match it with default language arabic. I can’t se anywhere to change that. It’s the same when playing trailers. They have arabic subtitles.
Check out your library settings (library: edit > general > language AND edit > advanced > country might influence your metadata and extras).
There are several places where you can set a preferred language for various things.

The properties of each of your Plex libraries. Each of those libraries can have a default language in which Plex attempts to fetch metadata.

‘Edit’ your library(s)
The properties of your agents.
(Though this only affects release dates and age classifications. I’m just including it here for completeness.)
Settings - Server - Agents - Movies - Plex Movie
click on the small ‘cog wheel’ icon at the end of the line ‘Plex Movie’
repeate the same under
Settings - Server - Agents - Movies - TheMovieDatabase
