Setting up HDMI Encoder Output/Stream as Channel

I have a HDMI encoder that takes the HDMI signal from the navigation system of our boat and provides a live stream to the local network. I’d like to add this live stream to Plex as a channel, so that all users can access the stream.

How would I go best about doing that?

First off you will need something like this https://www.magewell.com/products/ultra-stream-hdmi this will encode the HDMI signal into something compressed and more like a typical HD video file. However reading these streams is not that reliable with Plex. Essentially your solutions is then the same for those people wanting to watch streaming video cameras via Plex. Hopefully someone might be able to advise.
