When trying to setup the Live TV/ DVR I can get to the point where I select the lauange and normally the post code but the post code option does not show up as an option to select

What country are you selecting during setup? Is it one of the ones listed here?
If not, you’ll need to source XMLTV guide data.

No problem.
You can still use Live TV & DVR with Plex if you supply your own XMLTV guide data. Do a Google search for “Australia XMLTV” and you should get a few good options, some of them free. In particular, I think xmltv.net was created by some folks on these forums; and IceTV had a special for Plex users at one point.
