I want to select a song in my playlist and then shuffle from that point onward.
It seems like that functionality doesn’t exist (in the Android app at least). Either you shuffle on the entire playlist or you select a song and listen sequentially.
It could be fixed by adding a Shuffle button to the Now Playing screen.
