I love Plex. I heard though that Kodi is more customizable. My assumption is that this makes it more flexible, but more of a pain to set up.
Is there a reason to run both? Can you add Kodi without a lot of extra expense or time?

I use Kodi in my living room. I have two servers with identical copies of all my media, one runs plex the other already mentioned is Kodi. I find Kodi easier to use from the couch, I can control it beautifully with an xbox 360 remote controller where as my Plex experience seems to be the best with a Keyboard/mouse combo just imo.
The Kodi interface runs a lot faster/smoother for me, so that’s a plus. Kodi definitely has more UI customizations, but Plex makes it a lot easier to edit my medias information when I find mismatches or shows that don’t scrape well.
I’ve been using Kodi for a couple years, I recently set my plex up about 4 months ago, so there is plenty I’m sure I’ve yet to see or try. I briefly had plex and kodi installed on the same PC when I was first trying out Plex and it worked fine set up that way.

I was wondering if i could install kodi and point it to my existing folders set up for Plex and it would recognize the media. It kind of sounds harder than that. Am I wrong?

To do it the clean way, you can setup Kodi as a client for your Plex server with PlexKodiConnect: https://forums.plex.tv/discussion/210023/plexkodiconnect-let-kodi-talk-to-your-plex
