I’ll note the temporary workaround solution in this thread for those wondering (its already posted here: Chinese subtitle display problems in the new version of iPadOS 18 & iOS 18 - #8 by Craig_Holliday)
You can either
- turn off bold text
- create a new subtitle style in iOS settings using a different font
