As far as I know, Plex seems to download a load of posters from TMDB, and picks whichever poster happens to be the most popular one (most used? most voted? unsure). I think it only changes the poster of a movie/show if you refresh the metadata. I don’t think you need to do that, so try disabling Refresh library metadata periodically in the scheduled tasks section of your server settings.
As for poster locks… I thought that once you manually change a poster, it locks the poster to that image from then on. At least, I’ve seen a few posts here from people asking how to turn OFF that invisible lock on their posters, to refresh their database (a how-to post popped up here today on how to do that, actually…)

I had something weird happen, don’t know if it’s related.
I changed the poster to a show in the library view. That triggered the one on the one on the home screen, recently added tv shows to change to the same one. That’s generally what happens.
But a day or two later I was scanning the home screen to find it and didn’t see it. It had reverted to the original poster but only on the home screen
The library view was still the same.
There’s no posters even available to choose for the one on the home screen and now, no matter what one I change in the library there’s no affect on the home screen
It’s annoying. I download bunch of vintage posters etc for lots of films. But Plex reverts them to something else.
A lock feature on posters would be sweet!
Could even select more than one poster, and if you do it could display them randomly.
I see lots of people requesting that.
Also Netflix is doing that, I guess to make the library feel fresh
Manually selecting a different poster locks that selection. I would like us to improve this at some point so it’s visible and easy to toggle but this isn’t something that is on any roadmap currently.
Depending on what you added, the Recently Added hub is likely showing the Season poster of that show and not the show poster. Edit the season and check the posters for it.
Normally I advise strongly against any configuration within the Plex native data, because all is lost if you have to move your data to another server or reinstall your server due to hardware or software failure.
For TV shows there is that mechanism to put your preferred poster as “show.jpg” in the show folder and as “Season xx” poster in the season folder. Im am not sure if this works for movies, but I would try to put the preferred poster as “folder.jpg” or a similar name in the movie folder.
Of course “Prefer local media data” must always be set.

But it doesn’t lock it, when you run a scan libraryf files, it changes the posters.
At least many many movies I have manually downloaded covers, posters, VHS cover images etc for gets some auto-picked cover after a while.
Just follow the Local assets guide sent by the previous user and you won’t have to worry about that anymore.
The biggest disadvantage of using Plex interface to personalize your posters is that once you start doing it, you have to backup not only your database, but your whole metadata folder and it’s just a pita.
