So I am using my plex server remotely via vpn and I don’t want it to open ports via upnp. Disabling uPnp in my router is no option. I have remote acces, gdm and dlna disabeld.

This still gets added by upnp in my router and I think it is by plex.
Turn off remote access or set it to use a Manual port.
When a port is manually specified, Plex still makes UPnP requests to open it.
Assuming you want to keep Remote Access enabled, one option would be to firewall UPnP traffic to prevent it from leaving the server.
Like I said i have remote acces disabled…
