I own two plex servers in different locations, is there a possibility to synchronize the files on both servers ? So automatic copying files from one server to the other ?

You can sync the media files, but plex is not designed to sync plex metadata or databases.
Watched/Unwatched state can be synced, if the agent is identically selected on both servers. https://support.plex.tv/articles/sync-watch-state-and-ratings/
You want to stick very closely to the recommended media file naming, to keep manual corrections of media title matching to an absolute minimum. https://support.plex.tv/articles/categories/your-media/
