@Holger-Kuehn @D4rkPh0en1x I am going to send you in PM instructions on enabling detailed database tracing in the logs
(sent the links via reply to PM)
I checked under MetaData\Plex Media Server\Crash Reports and there was nothing
But it didn’t take very long to crash now after activating tagging and now I got the crash uploader in the logs
I gonna send all to you

fixed with development build “PlexMediaServer-1.29.3.6306-463218fd7-x86_64.exe”

The fix should now be in the beta that was released today - version 1.29.1.6316
Please shut down Plex Media Server and go through Add / Remove Programs and then uninstall the development build and then download the beta and install
