one moment it plays a video and then another day it stops playing.

Installing Jellyfin server if no solution is found.
Did you turn off video transcoding. Are multiple streams playing at once and only one it allowed? Is your CPU really just not powerful enough to transcode.
If you provide some details and/or server logs and/or the player logs maybe someone can help.
