The client always times out with filters like, unwatched, sort by last episode date added.
with PMS debug logging enabled and after you reboot the server and recreate the problem, maybe check your Plex Media Server.log file for instances of the word ERROR to see if your database is healthy. You may want to run DBRepair which is a shell script on GitHub written by our Linux guru in case you get to the point of restoring a db backup.
If that looks like, then the issue may be at the client level, but so much comes from the db that it’s worth verifying it’s not malformed.

just tried my AT4K, the hosted web app, and Plex for Mac,
but I can’t recreate your issue.
They all were able to sort my Linux instance of PMS by
Unwatched + TV Shows + By Last Episode Date Added
How large is your library. I bet it makes a difference.
I have 4976 episodes in my TV Shows
Did you see any ERROR in your Plex Media Server.log?
