TV shows getting transcoded during sync for no reason?

Sync’ing a season of a TV show (ripped from DVD to mp4) to my iPad (5th gen). I chose Highest quality, i.e. original, and yet the server still is spending time converting all the episodes instead of just downloading them directly. What’s going on here? How do I determine what it is about my .mp4 video files that is causing Plex to think it needs to convert them?

Here’s the xml from one of the episodes.

Note that if I sync this file to ipad using itunes it does not convert it, so it would appear the file is supported as-is.
