Unable to add media to my plex media server

I have plex media on an UNRAID NAS as a docker that has had stability issues lately. I rebooted the NAS and had to repoint my media to the various libraries (Movies, TV and Music). As I attempt to add the media, I point the correct set of media but when I press save - I get an error that changes will not be saved.

any thoughts why Plex is not allowing me to add media?
