Starting with a fresh installation and configuration of the Plex for Mac app
I have looked into where the downloaded media gets stored and you could salvage your previous complete downloads by looking for the files within directories below this path
/Users/jaredgrover2019/Library/Application Support/Plex/Plex Media Server/Sync
The media goes into randomly created subfolders - so you will need to search the directories for .mkv files and any other media file types and move the files out. If they are still within /.grab/xxxxxx directory structure, then they are probably incomplete downloads.
After securing your completed downloads and moving them elsewhere, delete the whole directory structure and files within this path
/Users/jaredgrover2019/Library/Application Support/Plex
and launch the app to start with a fresh install / configuration

These are currently the three plex apps that I have. It is the one that says just “Plex” that I should delete and reinstall, right?

I was not talking about uninstalling the app.
It was simply purging all its application data - after securing your completed downloads.
So using GoTo Folder
go to
/Users/jaredgrover2019/Library/Application Support/Plex/Plex Media Server/Sync
Find all the downloaded media files that are held below this folder
Move them to other location
Then go to folder
/Users/jaredgrover2019/Library/Application Support/Plex
and delete all contents within this Plex folder including all sub-directories
Then launch the Plex app
So when I do this, all that I find is one bundle file. The rest is empty (or maybe they are hidden and can’t see them. I should mention that I discovered that as soon as a movie file is completed downloading or syncing (or shortly after) the file seemingly disappears into oblivion. It’s very strange. Is it possible that I have some preference that is hiding these downloads and syncs?
Here is a a screenshot of the only file in that Plex configuration.
Did you drill down into each of the sub-folders ?
Folder named “1” and folder named “3” and folder named “4”
The movies would not be in the Metadata folder
Suggest you get a list directory of all the directories below Sync and see if there are any downloaded movies/videos
So start a terminal session
Then run this command in the terminal window
ls -R -ail "/Users/jaredgrover2019/Library/Application Support/Plex/Plex Media Server/Sync" > "/Users/jaredgrover2019/Documents/ListSyncFiles.txt"
Then find this file “/Users/jaredgrover2019/Documents/ListSyncFiles.txt” and view it and see if you spot any mkv or mp4 or other downloaded media that you need to move out and save elsewhere
If there are none, then fine - go to the next action which would be to purge the whole set of files and directories here
/Users/jaredgrover2019/Library/Application Support/Plex
and then relaunch the Plex app

When I try to run this the terminal does nothing but start a new line. Did I forget to do or type something first before running this code.
After typing the above message I tried to type the word run before the code above…and it said that no such directory existed…then I tried to type the word run after the code above and hit enter and it again said that no such directory exists. Should I assume that this means that the file above (/Users/jaredgrover2019/Documents/ListSyncFiles.txt”) does not actually exist?

Found this text file after searching for it in the “Go to Folder” option. I can’t tell if there is anything significant in it.
ok…so I just went ahead and. purged the configuration above the way you said to…and the issue has resolved itself from what I can see at this point. Thanks for your help. Here’s hoping it continues to work well.
One more question for you please. My MacBook just can’t necessarily handle more than 1-2 movies synced at a time because of storage. How would I properly go about deleting the synced movie files off of my MacBook after viewing them on the synced device, or whatever process is to be done to delete movies from the sync so that it doesn’t affect the storage space on my laptop?

I am 5 hours too late ! I have a new version of the app for you to try and it may have stopped the crashes. I will send it to you anyway - it is a development build version 1.16.0.1369
Now that you know how to purge app data - what you could try is to re-attempt that massive download - 29.7 Gb movie - of course first making sure that the available diskspace now is below that - if it is and the download fails and the app starts to crash on launch, then you could try the development build I will send you and see if it fixes the crashes - if it does not, then would like to see all the logs and diagnostic reports as before
