I had a TV series in 720p resolution and added it to my TV shows library. Much later I wanted to replace the files with 1080p versions.
I have occasionally done this in the past with movies by removing the low resolution copy, rescanning the library, adding the high resolution files, and scanning again. When I do this the correct video description shows when I view the movie details in the Plex app.
Experimenting here I tried replacing one episode and rescanning (without prior deletion & scan). This episode still reports that it is 720p (although when I play it I am fairly sure that I am seeing a 1080p version - the 720p file isn’t in the filesystem any more).
Then I tried refreshing the metadata for the episode. It still says that the file is 720p.
As far as viewing the episodes locally is concerned, this doesn’t seem to cause a problem (could it? might unnecessary upscaling or transcoding be happening?), but surely there is a mechanism which would let Plex detect/correct the file with its true resolution?
You’ll want to Analyze the item, not refreshing its metadata.
Refreshing metadata will just look for changes to local extras and reload/updare online metadata.

Keep in mind that if you upgrade the files of local extras though, you cannot use Analyze.
You have to remove the extras, Refresh Metadata, then put the upgraded extras into place and Refresh Metadata again.
Yes, it’s a bit confusing. But extras don’t have the context menu to trigger the analysis. And they are only scanned for during a metadata refresh, because they are considered to be a kind of metadata.
