I use Tiny Media Manager to set my information for my media and save the nfo and artwork in the folder of each title.
How can I get plex to use this information and not download and overwrite this with its own data
Plex doesn’t read information from nfo files (except for some identifier like an IMDb ID to help matching it). You can configure your library to prefer embedded metadata – in which case Plex will 1st look for embedded metadata (from what I’ve seen this will mostly only work for mp4/m4v/mov files; not for mkv or other containers).

Once installed, set agent to this and rescan library.
