Watch together just doesn't work

I’m in the UK and have a friend in New York and we regularly watch movies together by simply Facetiming for audio and pressing play to start a movie at the same time so we were really excited when we heard about Plex Watch Together.
We both went out and bought Oculus Go’s installed Plex, bought a pas sat down and…completely useless.
We have spent hours now trying to get it to work and it is a complete pig. It plays for maybe 5 seconds, then stalls, the blinds go up and come down ad nauseam, the push to talk works intermittently, it gets out of synch then in synch, then stops at one end, then both - Its probably the most terrible software experience I’ve have ever had and I’ve been using lots of beta software for a long time.

I’m running the Plex server on a pretty new top of the range iMac (3.3Gh Intel Core i5) streaming from an HP 8Tb media server with 1,000+ movies. I thought this server might be a bottleneck so I loaded a single movie into a local folder on the iMac but it makes no difference whatsoever. We both have reasonable internet connections (Mine shows 25Mbps and the one in NYC is in central manhattan and that shows 100+ so I can’t believe it’s a connectivity issue.

Has anyone actually got to to work reliably in real life (as opposed to sitting next to each other)?

If so, can someone please post settings, tweaks etc that might help?
