On my Windows 11 PC Plex client on the far left I can see:

Watchlist
Discover
Downloads
More >
Only when I click on More do I see:
mbp (my Plex server)
Movies
Other Videos
TV Shows
I could case less about Discover, Watchlist and Downloads, how can I remove those and by default show Movies, TV Shows and Other Videos when I launch the Plex client?
You can customize which libraries are displayed in the sidebar (main) navigation.
Plex is using the term pin / unpin for that purpose… libraries that aren’t currently pinned to the sidebar will show up in the More section grouped by the server to which they belong. You can select Pin from their context menu to add them to the sidebar. Similarly you can use Unpin from the context menu of libraries in your sidebar to hide them.
Once items have been added to the (main) sidebar you can also change their order.
