Hello, 
 I'm new here in the Plex family and I need your help.

When I’m sharing libraries to a friends (including my devices[me]) where to find or how to get the history of who, what, and when is watching and connects in my shared libraries and playlist with them. (except that I can see in real time when someone is playing something but if i’m not there to check it I can’t see it later)

You can see who is active, playing some videos on the server dashboard.
With a Plex Pass membership the dashboard will also show some more advanced information (e.g. CPU/memory/network consumption, play history…).
