How do I disable automatic updates. I told Plex to ignore updates, it still upgraded and now I’m back to not being able to stream. Having to downgrade each upgrade is not something I want to do.

It varies by platform. What is the OS for your server? Are you using Docker, a virtual machine, etc.?
Server 2022, no vm, non docker
I’m not familiar with Windows Server and how Plex Media Server behaves on it.
On Win 10/11, you can change between “Ask Me” and “Automatically during Maintenance.”
Also, you can change between the public and beta channels.
If the Ask Me / Auto setting is stuck on Auto, try changing to the Public channel, even if you’ve a beta release installed. AFAIK, Plex will not fall back to a prior release (but it might auto update when 1.41.7 goes public).
The update channel setting is stored in the Windows registry: HKEY_CURRENT_USER\SOFTWARE\Plex, Inc.\Plex Media Server\ButlerUpdateChannel. 0 = Public.
I’m not sure where the Auto/Ask Me setting is stored. I don’t see it in the registry.
As far as the problem with TrueHD, this has helped some people:
Plex uses the EasyAudioEncoder to transcode TrueHD. Moving (or deleting) the folder forces Plex to download a new copy from plex.tv. It is downloaded on demand, so it won’t appear until needed (transcoding EAC3 & TrueHD, maybe others).
