Can the current PLEX player on NVIDIA Shield TV 2017 handle 7.1 channels AAC LE in terms of transcoding it to 7.1 channels E-AC3 or PCM so that it plays correctly on a 7.1 channel surround sound system via a 7.1 channel AV processor with correct channel mapping and no compromise to sound fidelity ?
I’ve a Shield Pro (2015). It sends AAC LC 7.1 to my Denon 4300 as PCM 7.1. The conversion occurs on the Shield. Plex Media Server shows Direct Play.

Plex is a client-server system. You have Plex Media Server that streams your media to Plex clients.

So lets say I wanted PLEX working in my dedicated theatre room, could I connect a big external hard drive to my Nvidia Shield TV and then use PLEX running under Android TV to organise and play all my movies that are on that hard drive. In this case, do I need the server software ?
If that hard drive is a NAS drive that is plugged into my network than I suppose both my media players (Shield TV and Mi Box) can play movie files off of that NAS drive. However, the NAS drive would need to run the PLEX server software, right ?
Plex uses a client - server model. You must have Plex Media Server (PMS). It streams media to Plex clients.
If desired, you can run PMS on a Nvidia Shield (except 2019 tube model). It would stream your media to your Plex clients - the Shield itself, Mi Box, etc (You run two apps on the Shield, the PMS s/w to stream the media and the Plex Android TV client to view the media).
If running PMS on a Shield, you can keep your media on a USB drive attached to the Shield. If desired, you can also host your media on a NAS. The Shield can mount the NAS via SMB just like a PC, Mac, etc. PMS on the Shield will read the media from the NAS and then stream it to the desired clients.
You could also run PMS on your NAS (assuming it is supported). PMS on the NAS reads the media locally then streams it to the desired clients.

The Plex system is very flexible. You can run the PMS s/w on a Shield, a NAS, a PC, and other platforms. You can run multiple servers at the same time. For example, you can run PMS on your Shield and your NAS at the same time, get a feel for how it works on each platform, then decide which one to keep (or keep both).
The best way to understand Plex is to install and use it. Even if you install on a different platform, say a Win10 PC, you can still get a feel for how Plex works. The end-user interaction with Plex is the same, no matter the platform where PMS runs.
