To configure not just 1 but 2 preferred in the “Prefer subtitles in” of Language Setting when playing movies with foreign audio. Like a Primary for first preferred and Backup for second preferred subtitle.
Its kinda like a backup subtitle that would be selected when the primary preferred sub you set is not available. This is also going to resolve the issue when you download a subtitle off internet which are not properly labeled with any language and labeled as “Unknown”. Setting the Backup to Unknown will automatic select that sub to show when the movie plays.
To visualize what Im trying to say or what im referring to in the Plex setting. Down the Language setting.
