A few days ago, I gave someone permission to access my Plex videos. This person went on my computer and into Plex, granted themselves permission to access my videos. Today I checked and it looks like they checked permission to my entire computer. (my main hard drive) Is that possible? Could Plex allow this person to see all my personal files?
You need to provide more information. How do they access the videos? With a plex account? With YOUR Plex account?!

Plex only cares about media files.
It appears that you gave this person your plex.tv username and password.
This is the wrong way!
For now, you’ll want to change your Plex password: https://plex.tv/users/edit
Make sure to tick the checkbox which says ‘sign out all conmnected clients’.
Verify, that your plex account has still your own email address.
