Yes, or a restricted new menu that allows only the changes of audio and subtitles as you can do on every single streaming platform 
Well… I was asking because this is already implemented (as described in your OP; no need to cancel the actual playback)
What do you mean ? I’m asking for a shortcut, tell me if I’m wrong, but there is none.
As you said, we have to go ... then Playback Settings → subtitles /audio
If you check Netflix, Disney+ and Prime Video mobile apps, you just have to click on the shortcut that enable an overlay with the audio and subtitle options.

So your suggestion is to move the individual options from the playback settings directly into the playback controls (cutting away the extra click on ... > Playback Settings)

And eventually, a different menu, instead of the Playback Settings menu, it could be a menu displaying ONLY audios and subtitles options with no extra click (no need to click on subtitles → english subtitle for example, but directly one side with the available subtitles and the other side with the available audios. In order to optimize and to reduce as possible the action /click of the users.
