I’m not sure if that will have the desired effect - it might also change the sizes of other things within Plex. But it will exclude Plex from the system-wide scaling.
And a totally different option is the Plex HTPC app (preview):
It’s designed for 10-foot screens and mouseless use. It scales the alphabet nicely.
