Any help or advice or training would be appreciated…

Not really. Here is another thread where the need for such a thing was mentioned.
There aren’t any guides or documents. It really is a ‘wing it’ deal. It takes us a long time to figure out what’s happening. With all the logs we see, we still have difficulty. Some logfile analysis can take several hours to spot what’s happening even with the tools we’ve crafted for our own use
@ChuckPa Thanks!
Bummer.
What mode of logs is best?
Normal
Verbose
Debug
IE: Easiest to interpret with minimal static.
IMHO, Debug is best. It gives you a solid foundation to start with in event of errors without hammering the machine
Verbose is a) an insane load and b) roll over too fast to be of use unless looking for something specific.
If your machine is rock solid, set for INFO.

Funny you should mention that, 5 months ago at the roundtable Plex said they were working on a guide to be able to interpret their logs and work with their apis. @kinoCharlino any news about that?
