The Channels app has been developing a version of the YADIF2x deinterlacer, which produces 60fps and is optimized for Apple GPUs using Metal.framework.
This work was recently open-sourced and is included as part of FFmpeg in the recent 5.0 release.
Can’t speak for Plex, but maybe they will incorporate it into their app soon.
