Long answer:
As long as you watch content from your own server (or servers shared with you by other Plex users), it is not stored which movie, tv show song etc. you are playing.
If you are using one of the ad-supported free media offerings by plex.tv, anonymized statistics are gathered. These are in part shared with the owner of said media items for purposes of sharing of ad revenue and statistical analysis.
