Is this something new? I have an audio file that is supposed to be DD 7.1, but it shows as EAC3 5.1. If I choose the dropdown in (browsing via web browser on my PLEX server), it shows that it’s DD-7.1 ch in grey. I’ve attached a picture.
DD+7.1 ch is the track description from within your file (track metadata). Plex has been displaying those for some time – though not yet on all clients.

Basically the grey part is just a string from the track metadata itself while the header (English (EAC3 5.1)) is the actual technical details (language + codec/profile). So from the looks of it you got an English language 5.1 EAC3 track that’s been labelled as “DD+7.1 ch”.

Seems to be related to how ffmpeg is detecting those tracks. Apparently there’s a special encoding of 7.1 formats to make them compatible w/ 5.1 layouts where ffmpeg will identify the track as 5.1 / 6 channel format.
There’s a longer thread about the technical details.
From doing a quick scan over the thread it seems ffmpeg has released a newer version that should handle such tracks better – no ETA as for when Plex will incorporate that version
