Back up Plex Server on NAS and then use for new Shield

So my trusty NAS 918+ died last weekend and I am now in the process of ordering a 1821+.

In the meantime I have set up Plex Media Server on a 2019 Shield and pretty impressed with what it can do and am now thinking this could actually now be my Plex server and let the 1821+ be a file storage unit seeing as it doesn’t have an onboard GPU.

So when I get my new NAS up and running and hopefully my old HDDs still work and didn’t die with the unit went bang, I should be able to access the current Plex install. So my question is:

Can I now back up that data and restore it to a new location on the NAS that I can then point the Shield at and it then just uses the database and metadata from my old install? So this way the Shield is the Plex server but is using my old metadata?

I debated on using the Shield instead of the NAS for the Plex server. The Shield does nicely, plus I don’t have to expose the NAS to the web this way. Here’s a link describing what you want to do, at least I think it does…
