I suppose what you’re asking for can already be done using existing software. This has been discussed in an earlier suggestion asking for a similar cloud/remote backup solution.

There are plenty of products available on the market to do what you want outside of Plex. Rclone Odrive Rsync DoubleTake Most Cloud storage solutions allow you to select your own hardware as a “Cloud” provider so you can have your own priovate cloud replication if you want and not pay the big boys.
