Are you actually talking about music, or rather about audio books and podcasts?
Yes and No.
You can change the view to Folders, it’s the bottom option on the library view list, but that’s not what Plex is about really. The whole point of Plex is to abstract your viewing of the media from the structure of the files themselves. Your job when adding media (music or otherwise) is to organize the media into the directory structure outlined here, so that Plex Media Server can identify what the tracks are most accurately to then populate the server listings with correct metadata for the files.
You browse the library via the Plex clients’ interface, where the media is presented listed as artist, album, song, genre, etc. Where the files are located is meant to be irrelevant, because a media library can be made up of multiple directories that don’t even have to be on the same physical machine.
Playlists and Collections are meant to be how to create your own personal curation of media into persistent groupings if you don’t want to just play one artist or album or select specific tracks for a single listening session (as a queue).
