If you edit the metadata in your files, you need to tell Plex to ‘refresh metadata.’ You can find the command on the overflow menu for albums, artists, or entire libraries (careful - this can take some time, if you have a big library. It also will overwrite any customizations you’ve made to tags within Plex, if you didn’t lock them).

Couple of notes:
- When you edit the metadata within Plex, it does not write back to the embedded tags in your media files. You are strictly editing Plex’s database. Plex never modifies your files. The only exception is that you can delete files from the hard drive via Plex, but only if you’ve enabled that feature.
- If you change the filename of your media files, you’ll need to run the ‘Scan Library Files’ command.
