In plex server under movies i have 3 folders, MOVIES DOCUMENTARIES and TV SHOWs and thats how i would like to browse in plex. But it seems i cant, because everything is in one folder. Even if i choose “sort by folders”, he seems to display all folders that just has no subfolders inside, i mean, that seems like criteria…

You cannot create “folders” through the server. So I have to wonder what it was you actually “created”: genera, collections, libraries or something else.
Whatever you created you have to access the movies using the same thing but I know you did NOT create any folders through the server.

What you need to do is create a library in Plex called Movies.
Point that to the movies folder on your PC
Then one called TV Shows and point that to the TV Shows folder on the PC.
You may have a lot of difficulty with your documentaries though.
If some are one off documentaries and some are season based documentaries then you will have to separate them. Totally lame I know. But Plex is incapable of dealing with mixed content.
Probably in the two or three top reasons I switched to Emby.
Alternatively, you just add them all to Plex as a Library for “Other Videos” (or one Library of “Other Videos” for each, TV, Movies, and Documentaries) and browse everything by folder and filename. Not pretty but it’s quick! ;^)
Let me be more detailed.
By Default, in plex server under the libraries I added library movies. Under that library i added 3 folders:
e:/movies
e:/documentaries
e:/torrents (so i can acces something just from torrents download folder, before moving files to other folders)
Thats what i would like to be in the root of movies section in plex app on the tv.
I hope i am more clear now.
When you add two more folders to a Library, Plex sees that as ONE conglomeration of videos.
If you would like to browse those three folders separately, create three libraries, with one folder each.
You have to Create separate libraries linking your different media types to each.
Example: Movies link to a Library called “Movies”, Torrents link to a Library called “New Content”
