Can't get Plex working correctly on TNAS

I started setting up a Plex server recently, and I really want to like it but it seems that I keep having issue after issue. I’m not sure if I should post a separate question for each issue or if they are inter-related so I’ll just dump it all here. I’ve read through some of the forums for these issues already but haven’t had any luck resolving any of them. I do not currently have plex-pass for hardware encoding. Though, I was under the impression that everything should still work with software encoding, just with much worse performance. I’m planning on getting this, but want to get everything seemingly working first.

Server Hardware - Terramaster F4-424 NAS, 2x8gb WD red drives in Raid 1, hardwired to router

Streaming Device: LG C1 oled Smart TV, wifi

Issues I’ve had:
Unable to claim Plex server. Initially Installed Plex through the Terramaster app store. I later uninstalled this and then I reinstalled using the file on the PLEX website for my model.

Subititles: Embedded Subtitles within the video file are not displaying on plex when turned on within settings. I tested the video files in VLC and there wasn’t any issue. As a side note, none of my video will play with enabling force direct stream under the settings. This might be some type of encoding/transcoding issue but I’m at a bit of a loss.

Failed metadata parsing - None of the content in my library has any metadata associated with it or scraped. I am following the naming convention and have rescanned/refreshed it with no luck.
