Can't update Mac Media Server without starting from scratch, then can't edit data

Server Version#:1.19.3.2740-add6f438d
Player Version#:appletv 4k, iMac Catalina 10.15.4

Every time I want to update the server software I have to clear the cache and the application support. If I don’t, when I try to run the server software the icon appears for 2 or 3 seconds then disappears and the server won’t run. So I throw everything out and try to reload all the media. It lets me add to the library, but as soon as I try to edit titles or posters or anything I get this message: “There was an unexpected error loading this library.” Sometimes if I toggle to another library and back, I can get it to work for a few minutes, but then I get the message again. I try restarting the server, but that seldom helps. I’ve owned a Plex Pass for more than six years, and I’ve never been able to use Plex reliably. Finally Plexamp is a big step forward, but the same thing happens with my music library. Even when I’m simply trying to watch a movie on my AppleTV 4K, it often has trouble and tells me there is no media in the library. Am I doing something wrong? Any suggestions? Please help. I’ve wasted so many hours trying to get this software to work, I’m ready to give up and just switch to Infuse. Plex does many things better, but at least I can watch a movie without getting a headache.
