Plex regularly asks me to claim my server? Why is this?
I also authenticate via my Apple account and would like to return to a more traditional e-mail address. When I try to change my email I’m asked for a verification code. Where can I get it?

You have enabled 2FA on your plex account. Thus you need to have either an authenticator app which generates a new code every 30 seconds,
or you use one of the emergency codes which were given to you when you activated 2FA. Better make sure that you never use up the last emergency code for anything else than making more emergency codes!
