Collections aren’t implemented to their fullest potential in Plex yet. I think what most people would expect (myself included) would be for a collection to show up as a single movie poster that acts as a container for the movies in that collection.
This way, you could group, for example, all the Star Wars movies together and not have them take up 6 positions in the list of movies.
I saw on the plex forums that this feature was requested ages ago, but still isn’t implemented, so who knows when/if we’ll see it.
Collections are mostly useless without it imo.
