How fast is “fast”?
I’m running an i5 4690k Devil’s Canyon but also run BlueIris and a few other things on this PC.

Well this depends of course. An unscientific way to find out would be to try to ‘optimize’ a recording and see how long it takes. For example, if a 60 min recording takes more than 60 mins then it does not seem the CPU would be able to keep up (but I don’t think that will be the case here based on the cpu you have). So let’s assume that you can transcode on the fly, the question becomes how many simultaneous recordings? I don’t know how many tuners you have but again if the 60 min show transcodes in 30 mins then your machine can roughly handle two simultaneous recordings. FWIW, I transcode all the day’s recordings overnight via MCEBuddy.
