Is there anywhere to download the latest/default client profiles? If profiles were customised, are they replaced on an update?

If you have created or downloaded somewhere a customized profile, you have to put it into Profiles folder under Plex Media Server folder. There is no such folder by default, so you have to create it and put your profile there. Then restart PMS and it will scan for custom profiles within this folder and override default profiles. Any PMS upgrades/updated will not affect this folder.
If you save your custom profile in default folder where PMS stores other profiles, then of course your custom profile will be overwtitten
